Cook our seasonal recipe in 25 minutes : Chia pudding with strawberries, pepper and basil
Prep + cook: 25 mins (+ 2 h rest)
Ingredients for 4 people:
- 500 g of strawberries
- 1 red bell pepper
- ½ orange
- 80 g of chia seeds
- 5 dl of vegetable drink of your choice (soya, almond, etc)
- 1 vanilla pod
- 8 cl of agave syrup
- 1 tbsp of cane sugar
- ½ bunch of basil
- In a small bowl, whip together the chia seeds and the vegetable drink. Add the agave syrup and the vanilla pod, split and scraped. Let it rest in the fridge for 2 hours, mixing it up once in a while.
- Cut the pepper in dices and place them in a small casserole with the juice of the half orange and the cane sugar. Cover and let simmer for 15 mins on low heat. Keep aside 4 small strawberries and cut the rest in pieces. Add these to the casserole and continue cooking for 5 mins, uncovered. Let it chill.
- Add the chopped basil leaves in the strawberry compote; mix and distribute in 4 bowls. Add the chia pudding and decorate with basil and strawberries. Serve chill.
Tip: you can replace the basil with mint and take out the vanilla.
