Bulgur salad with nectarines and sweet potatoes
Prep + cook: 25 mins
Ingredients for 4 people:
- 2 to 3 nectarines (depending on their size)
- 1 large sweet potato
- 2 sucrine lettuces
- 1 red onion
- 1 lemon
- 250 g of bulgur
- 5 tbsp of olive oil
- 1 bunch of basil
- Salt and pepper
- Peel the sweet potato and cut it in dices that you will then brown for 10 min in a pan with 1 tbsp of olive oil. Add salt and pepper.
- Pour the bulgur in a bowl, cover with boiling water (± 35 cl) and let it swell for 15 mins. Add 4 tbsp of olive oil and mix with a fork to separate the grains. Sprinkle with lemon juice and add the sweet potato dices, minced red onion, chopped basil, salt and pepper. Mix well.
- Cut the sucrine lettuces in quarters and slice the nectarines. Add to the salad and serve.
Tip: you can also steam cook the sweet potato dices.
