LET'S ENJOY THE NECTARINE
 
Nectarine is a wonderful accompaniment to salads: In the Augustus salad, with cucumber, feta cheese and mint, it is a delight. For the more gourmets, you can opt for the large size version with bulgur. The recipes containing our fruits and vegetables of the month are seasonal. They change...every month (it's true!) - which allows us to work with the best seasonal products. Good for quality. Good for the planet.

 

Bulgur salad with nectarines and sweet potatoes 

Prep + cook: 25 mins

Easy

Ingredients for 4 people:

  • 2 to 3 nectarines (depending on their size)
  • 1 large sweet potato
  • 2 sucrine lettuces
  • 1 red onion
  • 1 lemon
  • 250 g of bulgur
  • 5 tbsp of olive oil
  • 1 bunch of basil
  • Salt and pepper

Method:

  • Peel the sweet potato and cut it in dices that you will then brown for 10 min in a pan with 1 tbsp of olive oil. Add salt and pepper.
  • Pour the bulgur in a bowl, cover with boiling water (± 35 cl) and let it swell for 15 mins. Add 4 tbsp of olive oil and mix with a fork to separate the grains. Sprinkle with lemon juice and add the sweet potato dices, minced red onion, chopped basil, salt and pepper. Mix well. 
  • Cut the sucrine lettuces in quarters and slice the nectarines. Add to the salad and serve.

 

Tip: you can also steam cook the sweet potato dices.
